Red Velvet Cake-The Vigil

Introduction
Cream Cheese Frosting with the deep red color makes this look professionally done and taste great!

Ingredients
Cake:
½ cup Crisco
1 ½ cups sugar
2 eggs
2 cups all-purpose flour
1 Tbls Cocoa
½ tsp salt
1 cup buttermilk
2 oz red food color
1 tsp baking soda
1 tsp vinegar
Frosting:
3 Tbls light cream
1 tsp vanilla extract
4 oz cream cheese, cubed
2 Tbls butter
½ tsp salt
3 cups confectioner’s sugar
Steps
Cake:
Preheat oven to 350 degrees. Grease and flour 3 round cake pans Beat Crisco and sugar until creamed Add eggs one at a time Add flour, cocoa, salt then slowly add buttermilk Add red food coloring beat well then add baking soda and vinegar Mix well then pour into prepared pans. Bake until cake pulls away from sides approximately 30 minutes. Remove and allow to cool before frosting.
Frosting:
In a standing mixer fitted with the paddle attachment, or with a hand-held electric mixer in a large bowl, mix the cream cheese, sugar, and butter on low speed until incorporated. Increase the speed to high, and mix until light and fluffy, about 5 minutes. (Occasionally turn the mixer off and scrape the down the sides of the bowl with a rubber spatula.) Reduce the speed of the mixer to low. Add the vanilla, raise the speed to high and mix briefly until fluffy (scrape down the bowl occasionally). Store in the refrigerator until somewhat stiff, before using. May be stored in the refrigerator for 3 days
